Hummus
Middle Eastern in origin, hummus is now taking on the flavors of other cultures. Black truffles, rosemary, Parmesan, sun-dried tomatoes, kimchi and dill are being blended into the spread, which is sometimes based on fava beans, edamame or other ingredients instead of the classic chickpeas. And hummus is expanding its role from sandwiches and dips to play a part in other menu items.
