Spam Musubi
Hula Girl Truck
Washington, D.C.

This food truck serves up classic Hawaiian food and Spam is a favorite in the islands. The musubi is a sushi handroll made with nori, rice and grilled Spam, assembled in a sheet pan and cut. Unusual but very tasty.

Oatmeal-Whole Wheat Pancakes with Blueberries
Ina’s
Chicago

Ina is known as “the breakfast queen” and I was blown away by her blueberry pancakes. They were very different—made with oatmeal and whole wheat to give them a hearty flavor and texture. Ina only does them when blueberries are in season.

Atomica Salami Pizza
Pizzeria Paradiso
Washington, D.C.

This women-owned pizzeria has three locations in D.C. The individual pizzas are made to order and baked in a woodburning oven. The salami they source for the topping is locally made in Virginia; fresh mozzarella, basil, tomato and a little extra virgin olive oil finish it off. The result is everything you’d want a pizza to be.

Terrine of Foie Gras, Ris de Veau and Rabbit
Menton
Boston, Massachusetts

Menton is chef Barbara Lynch’s new high-end restaurant. The food is all amazing and beautifully plated, and the ambiance is spectacular. The combination of ingredients on this dish, all skillfully prepared, was incredible. The richness of the foie gras is balanced by accompaniments of white peach, rosemary raisin toast and verjus.
