The availability of cheap restaurant sites has proven to be a boon for many expansion-minded businesses. That includes Highland Baking Company, an Illinois-based wholesale bread manufacturer that recently opened DC Sarnies restaurant in a shuttered Bennigan’s in Deerfield. But Sarnies is no mere sandwich joint—it’s also a test-kitchen facility that can be used not only as a showcase for Highland Baking’s products but also by its wholesale customers, including local chains that don’t have their own R&D capabilities. Using the restaurant’s full kitchen and inventory is part of the deal, but the real benefit, according to founder Jim Rosen, is the access to the opinions and feedback of the restaurant’s customers.
