During Hell Week at the East Coast Grill in Cambridge, Massachusetts, chef-owner Chris Schlesinger cooks up the Pasta Plate from Hell—a dish that is so spicy customers have to sign a waiver before they order it. One spicy food aficionado complied, only to be carted off by ambulance when he passed out from an overheated palate. The culprit—the Naga pepper, one of the hottest in the world.
Schlesinger created Hell Week to attract those macho eaters who seek the heat for pleasure and pain—and can then claim bragging rights. The true pleasure comes when the server delivers an orange Popsicle to put out the fire. Only a tiny percentage of spiceheads have finished the entire bowl of pasta without begging for that icy antidote.
